HEALTHY AND CLEAN CHICKEN AND BROCCOLI RECIPE

Another day, another healthy recipe I just have to share! This recipe is quick and easy, and tastes seriously delish! 

INGREDIENTS
2 organic chicken breasts (I use Publix Greenwise)
3 tablespoons of minced garlic
Parmesan cheese
EVOO
1 head of organic broccoli
Sea salt 
Pepper
Garlic salt
Lemon juice

DIRECTIONS
Pre-heat your oven to 400 degrees. Take a large stir-fry pan and pour about 1/4 cup EVOO into it. Place the pan onto a burner and set the heat to around a 3 or 4. 

While your oven and pan are heating up, put your head of broccoli onto a cutting board and start cutting into smaller pieces. I've added a picture of what the broccoli should look like when it's done. If you need to, you can reference that photo to see how small I cut my pieces. I usually aim for a bite-size amount. 

Toss the broccoli onto a baking sheet along with some EVOO. Sprinkle some sea salt, pepper, and garlic salt. Add a couple squeezes of lemon juice, and then finally, take some of the parmesan cheese and sprinkle that over the top. When the oven is pre-heated, stick the broccoli on the top rack for about 13-15 minutes. The cheese should be slightly browned at the edges when the broccoli is done. While the broccoli is in the oven, go ahead and cut up your chicken into small, bite size pieces. When the stir-fry pan is preheated go ahead and add your chicken.  Take 3 tablespoons of garlic and add it to the chicken. Let the chicken cook, stirring once every couple of minutes. Personally, I find that my chicken is usually done cooking in about 8-10 minutes time. 

The chicken and broccoli should be done cooking around the same time. Once they're done, all you have to do is mix them together! I usually take a big tupperware container (I already know I will have leftovers!) and throw it all in. Here's a picture of my leftovers that I had for lunch the next day. So yummy! 

I hope you enjoy this recipe as much as I do. This is one of my go-to meals when I am scrambling for time but want something healthy and full of protein and fiber. 

A quick note, the amount of ingredients above was only enough for myself for two full meals. If you are cooking for more than one person, or for a family, I would suggest doubling or tripling this recipe so there's enough to go around! Hope you enjoy!
